Just a quickie, right now we’re melting in high 28+ degrees heat, which may not seem hot, but as London is tightly packed together, the heat bounces off the buildings and feels anything but pleasant, I can assure you. Most people are doing anything they can to stay cool, although there are some masochists who absolutely love exercising and jogging in the local parks. I just break out in a sweat watching them. To this end I’m going to publish one of my all time favourite sorbet recipes that’s so simple you don’t even need an ice cream maker. You do need a food processor however.
Peel, core and chop your chosen fruit. I find apple and pears very good, any kind of soft fruit, etc., put them into a freezer bag and freeze overnight preferably.
Ensure your fruit is frozen but not so hard that it’s impenetrable and put into the food processor. Whizz up and add a few tablespoons of yoghurt (particularly to apples and pears to stop them going brown as they oxidize) and add sugar to taste. The advantage of making a sorbet like this is you completely control how much sugar goes into it, which shouldn’t be more than 2-3 teaspoons, much healthier than the usual sorbets. Also yoghurt is much better than cream and is very good for children too!! Happy Ice Cream Time
